Ingredients

  • 1/4 lb bacon, diced
  • 1 small onion, finely chopped
  • 1 cup celery, finely chopped
  • 1 medium carrot, finely chopped
  • 4 tbsp iSpice WellnessTM Vegetable Seasoning*
  • 2 tbsp all purpose flour
  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup low-fat sour cream
  • 2 cups low-sodium vegetable broth
  • 1/4 cup fresh chives, finely chopped
  • 1/2 cup marbled cheddar, shredded

Directions

Step 1

Heat a large soup pot over medium-high heat. Cook bacon until crispy, drain with a slotted spoon, reserving the fat in the pot. Drain bacon bits on paper towel and set aside for later.

Step 2

Drop onions, celery and carrot into the hot bacon fat and sweat until onions are translucent.

Step 3

Stir in iSpice WellnessTM Vegetable Seasoning* and flour. Cook flour with vegetables until just starting to brown.

Step 4

Stir in the potatoes and sour cream, mix well to prevent lumps.

Step 5

Pour in vegetable broth, stirring continuously until well incorporated. Simmer for 20-30 minutes until potatoes are very soft.

Step 6

Blend the soup with a hand bender until completely smooth.

Step 7

Serve hot with bacon bits, chives and cheddar as garnish.
