Ingredients

  • 1 pound ground beef (preferably with a high fat content, around 20%)
  • 1 large onion, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon turmeric
  • 1 teaspoon sumac (optional)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika (optional)
  • 1 egg yolk
  • 1 tablespoon flour (optional)
  • 1/4 cup water
  • Skewers (if using wooden skewers, soak them in water for at least 30 minutes before grilling)

Directions

Step 1

In a large mixing bowl, combine the ground beef, grated onion, salt, black pepper, turmeric, sumac, cumin, and paprika (if using). Mix well with your hands or a wooden spoon until all the ingredients are fully incorporated.

Step 2

In a separate small bowl, whisk together the egg yolk, flour (if using), and water.

Step 3

Add the egg mixture to the beef mixture and knead it well until it becomes a smooth and homogenous mixture. The egg yolk and flour help bind the mixture together and keep the kababs moist.

Step 4

Divide the mixture into 4-6 portions, depending on how big you want your kababs to be.

Step 5

Preheat your grill or grill pan to high heat.

Step 6

Take one portion of the beef mixture and shape it around a skewer, pressing it firmly to create a long, cylindrical shape around the skewer. Repeat with the remaining portions of the beef mixture.

Step 7

Place the kababs on the hot grill or grill pan and cook for about 4-5 minutes on each side, or until they are nicely charred and fully cooked.

Step 8

Serve hot with flatbread, rice, grilled vegetables, and/or fresh herbs.
