Maqluba, which means "upside down" in Arabic, is a traditional Middle Eastern dish known for its unique presentation and delicious combination of flavors. Here's a basic recipe for Maqluba:

Ingredients

  • 2 cups of rice, washed and soaked
  • 1 large eggplant, sliced into rounds
  • 2 large potatoes, sliced into rounds
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 500 grams of chicken, lamb, or beef, cut into large chunks
  • 4 cups of chicken or vegetable broth
  • 1 teaspoon of turmeric
  • 1 teaspoon of allspice
  • 1/2 teaspoon of cinnamon
  • Salt and pepper to taste
  • Olive oil for frying
  • Sliced almonds or pine nuts for garnish (optional)
  • Chopped parsley for garnish (optional)

Instructions

  1. Prepare Vegetables and Meat:

    • Season the meat with salt, pepper, and spices.
    • In a pan, fry the eggplant and potato slices in olive oil until golden brown. Set aside on paper towels to drain excess oil.
    • In the same pan, sauté onions and garlic until they are soft. Add the meat and brown it on all sides.
  2. Layering the Maqluba:

    • In a large pot, layer the fried vegetables at the bottom. Start with eggplant, then add a layer of potatoes.
    • Place the browned meat over the vegetables.
    • Drain the rice and spread it evenly over the meat.
  3. Cooking:

    • Pour the broth over the rice. The liquid should cover the rice by about 1 inch.
    • Bring to a boil, then reduce heat, cover, and simmer for about 30-40 minutes, or until the liquid is absorbed and the rice is cooked.
  4. Flipping the Maqluba:

    • Once cooked, let the Maqluba sit for 10 minutes. Then, place a large serving platter over the pot and carefully flip the pot upside down. Tap the bottom gently to release the Maqluba.
  5. Serving:

    • Garnish with sliced almonds or pine nuts and chopped parsley.
    • Serve hot with yogurt or a simple salad.
