Shepard's Pie

Shepard's Pie

Ingredients

  • 1 lb ground lamb or beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 1 cup frozen peas
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 cup beef broth
  • Salt and pepper to taste
  • 4 cups mashed potatoes (made from about 2 lbs. potatoes)
  • 1 cup grated cheddar cheese (optional)

Directions

Step 1

Preheat your oven to 375°F.

Step 2

In a large skillet, brown the ground beef or lamb over medium-high heat. Drain any excess fat.

Step 3

Add the onion, garlic, and carrots to the skillet and cook until the vegetables are softened, about 5 minutes.

Step 4

Add the frozen peas, tomato paste, Worcestershire sauce, and beef broth. Stir to combine, and bring to a simmer. Reduce the heat to low and cook for about 10 minutes, until the sauce has thickened slightly.

Step 5

Season the meat mixture with salt and pepper to taste.

Step 6

Transfer the meat mixture to a 9x13 inch baking dish.

Step 7

Spread the mashed potatoes evenly over the top of the meat mixture.

Step 8

If desired, sprinkle the grated cheddar cheese over the top of the mashed potatoes.

Step 9

Bake the Shepherd's Pie in the preheated oven for 30-35 minutes, or until the top is golden brown and the filling is heated through.

Step 10

Allow the Shepherd's Pie to cool for a few minutes before serving. Enjoy!
